Please see the Notes section below for information on the dates for this on-campus micro-credential. This on-ground competency-based Micro-credential has been designed to introduce learners to basic food pre-preparation, preparation and cooking methods related to the Food Service Worker profession. Learners will explore the various pieces of equipment and their use of cooking methods and preparation. Learners will learn how to correctly prepare coffee, tea and juice from different dispensing systems and demonstrate the ability to read standardized recipes and use them following standards and legislation. Learners will also be introduced to production sheets and how they are used in the kitchen, and the importance of preparing attractive and tasty food items for residents, including plate presentation. Learners will learn how to prepare vegetables and fruit for side salads and salad plates and prepare sandwiches and sandwich plates and desserts that adhere to the standardized production sheet. Lastly, learners will explore how to create and prepare texture modified diets for residents with varying health conditions.
